Curried Grated Egg Salad

When I saw this trend on Instagram, I went on a quest to make a more flavorful and interesting version. Grating the eggs was a genius idea by whoever came up with it, it makes this egg salad a super uniform and easy to enjoy lunch option or snack. Adding the celery, green onion and carrots make this egg salad a crunchy delight, the curry powder kicks up the flavor, and the Greek yogurt adds some extra protein. Enjoy!

Ingredients:
For the egg salad:
8 eggs, grated
1/3 cup Greek yogurt
1 cup grated carrot, from one medium carrot
1 green onion, diced
1 stalk of celery, diced
1 teaspoon curry powder
salt and pepper, to taste
.25 chopped parsley

Essential Equipment
My dinner plates are the Anthropologie Briar dinner plates and they are unfortunately no longer available. These ones from Fable are similar and have great reviews!
I got my gorgeous vintage pyrex bowls as a wedding present. I have found a few sets in good condition on Ebay and Etsy.
My cheese grater, here a carrot grater is the walnut handled conial grater from Williams Sonoma. I love that it keeps the grated contents contained.
I got the ingredients for this recipe from my local Whole Foods, including the bagels which were very good! Very accessible ingredients.
For the egg salad:
Grate your eggs and carrots using a cheese grater.
Add grated egg, carrots, diced green onion, celery, parsley, curry powder, salt and pepper to a large bowl and mix thoroughly.
Add Greek yogurt once other ingredients are uniformly mixed. Mix well again.
Enjoy on bread or with a cracker!
