Mini Beef Wellington Appetizers

These mini beef Wellington appetizers are the per way to finish the 2023 holiday season. I used some ingredients that we had leftover from all of my holiday cooking so this is a bit of a departure from traditional beef Wellington. Feel free to make your own substitutions as well. As with all of my recipes, this is not an exact science, cooking is fun and creative. Check out my instagram for folding techniques and more.

Ingredients

12 oz of beef, cut into 1 inch cubes

2 tbsp olive oil

1 tsp salt

1 tsp pepper

2 tbsp butter

2 slices of bacon

1 cup finely chopped cremini mushrooms

1 shallot, minced

1 tbsp thyme

.25 cup dijon mustard

1 sheet of puff pastry

1 large egg, beaten for egg wash

.25 cup creamy horseradish

Parchment paper

Baking sheet


Instructions

1.Preheat oven to 400F.

2. Heat 1 tbsp of olive oil in heavy pan. Sear the beef cubes, about 1 minute on each side. Remove from pan and set aside.

3. Add 2 tbsp of butter and 1 tbsp of olive oil to the same pan. Add diced bacon and cook over medium high heat until fat is rendered.

4. Add diced mushrooms and shallot. Cook for about 8 minutes over medium heat. Remove from heat and add thyme, salt, and pepper.

5. Unroll sheet of puff pastry. Roll out slightly, until the sheet is approximately 12in by 12 inches. Cut sheet into 16-3in by 3in squares.

6. Add once beef cube to the center of each puff pastry square. Top with Dijon mustard and about a tsp of mushroom/bacon filling.

7. Join corners of each square to seal. Transfer to baking sheet lined with parchment paper. Place beef Wellington bites seam side down.

8. Brush with egg.

9. Bake in oven for 15-20 minutes at 400F, until golden on top.

Serve with horseradish sauce and enjoy!
