No Bake, Blackberry Pie Parfait Cups

These pie parfait cups come together so quickly and are equally appropriate for breakfast or as a high protein dessert. They start with an easy, no-bake graham cracker crust and are topped with a layer of vanilla Greek yogurt and smashed blackberries. You can sub any fruit that you wish for a healthy-ish, no bake pie-like treat.





 

Ingredients:


No Bake Graham Cracker Crust:

1 cup graham cracker crumbs

4 tablespoons butter, softened

1/4 cup white sugar


Blackberry Pie Parfait Cups:

2 cups of vanilla Greek Yogurt

2 cups of blackberries, smashed

Let's Assemble!



Essential Equipment

My glasses are the short kitchen tumblers from Williams Sonoma's open kitchen collection.


I got all of the ingredients for this recipe from my local Vons. The siggi's vanilla Greek yogurt, is the highest protein and most delicious Greek yogurt that I can find but you can use whatever yogurt that you wish!


For the crust:

Melt the butter.


Crush the graham crackers until flour-like consistency.


Add sugar and mix until uniform.


Pour butter over the graham cracker and sugar mixture. Mix with a spatula or hand until uniform and dough-like.


For the parfait pie cup: 


Add graham cracker crust to the bottom of a cup or bowl. Use your hands to press the crust into the bottom of the receptacle until it looks like a crust.


Layer vanilla Greek yogurt over the crust.


Smash blackberries with a fork until juicy and somewhat liquidy. Spoon the smashed blackberries over the yogurt and enjoy.
