This sandwich combines the breakfast perfection of a bacon, egg, and cheese, with the classic and intense flavors of a pastrami sandwich. The super basic sauce takes this breakfast to another level and they are super easy to throw together if you have the sauce and pastrami ready to go.

Ingredients:

The horseradish/mustard sauce:

2 tbsp Greek yogurt

1 tsp of yellow mustard

1 tsp horseradish

Hot sauce to taste

The pastrami, egg, and cheese:

1 everything bagel

1 egg

1 tsp of milk

4 oz of pastrami deli meat

1 slice of Swiss cheese

Sauce

Let's Assemble!

Essential Equipment

My toaster is from Balmuda. It is expensive but it is amazing. You can revive a day old croissant and make bread taste freshly baked.

This is the perfect non stick pan. Everything just slides right off, we use it everyday for eggs.

I got the ingredients for this recipe from my local Whole Foods, including the bagels which were very good! Very accessible ingredients.

For the sauce:

Combine all ingredient in a small bowl and mix until smooth.

For the sandwich:

Toast the bagel.

Beat the egg with a dash of milk.

While the bagel is toasting, let egg cook. Once one side is cooked, flip and add the Swiss cheese slice.

Add the pastrami to the same pan to heat it up.

Once egg is cook and cheese is melted, remove from heat.

Spread horseradish/mustard sauce on both sides of the bagel.

Add cheesy egg to the bottom half of the bagel.

Add pastrami and join both sides of the sandwich.

Enjoy!
