Spicy, Cheesy, Chicken Fold-Ups with Kimchi

These are a fun, indulgent, and delicious meal for any time of the day. You could have one for lunch, dinner, or at 2am if you have extra ingredients saved in the fridge.


They are a perfect and insanely favorable upgrade to a classic chicken quesadilla. You can add the flavorful ingredients to the a quesadilla that you are making for your kids for a meal that the whole family will love.





 

Ingredients!


1 pound of ground chicken

Olive oil

1 tsp salt

1 tsp ground pepper

1 tsp chili powder

1 tsp garlic powder

1 tsp onion powder

2 tbsp soy sauce

2 tbsp honey

3 tbsp of chili crunch

1 cup of Greek yogurt

2 green onions, diced

1.5 cups of Colby Jack cheese

1 cup of kimchi

4 burrito sized tortillas


Let's Assemble!



Essential Equipment


My plates are the Anthropologie Briar dinner plates and they are unfortunately no longer available. The closest thing that I could find are these Crate&Barrel dupes also adorable, but shinier than the Briar ones.


My soy sauce and chili crunch are both from the Momofuku goods store, I got the rest of the food for this recipe from Whole Foods.


Fold her up!


Add olive oil to a pan, add ground chicken, soy sauce, honey, 1 tbsp of chili crunch, chili powder, garlic powder, onion powder, salt, and pepper. Cook until the meat is cooked.


Stir the other 2 tbsp of chili crunch to the Greek yogurt.


Cut from the center of the tortilla to the edge.


Think of the tortilla as 4 quadrants.


Place the meat in the bottom left. Place the yogurt sauce in the top left. Place the kimchi in the top right. Place the cheese in the bottom right.


Fold the meat quadrant over the yogurt, keep folding clockwise, folding that quadrant over the kimchi, then that quadrant over the cheese.


Place in a oiled pan over medium heat cheese side down. Toast for 2-3 minutes on each side and serve with leftover yogurt sauce for dipping.
