This is a staple for birthday breakfasts in my house. It is so easy and only semi-homemade but has a delightful homemade taste and smell. This recipes is adapted from a Magnolia Home recipe with a few change to make it more of a loaf that you can cut into a serve alongside a more hearty or protein rich element of the meal.
The conventional birthday wisdom is that as you get older, your birthday get less important. After you pass the milestones of your first legal drink or being able to rent a car on vacation what’s the point. As i have gotten older, I have realized that it is the opposite for me. As I have moved away from my life-long friends and as the people that I used to spend every moment with get busier and busier, it gets more and more important to use these milestone days to show the people that you love that you are still there, that you love them just as much as you did when you shared a twin bed for the summer when you couldn’t afford personal space. So whether its a sweet card or this blackberry puff, find your way to show your care to your friends on their birthday, whether it be their 29th, 42nd, or 71st.
Ingredients
1 stick (.5 cup) butter, at room temperature
5-6 large croissants cut into strips
3 cups blackberries
.67 cups sugar
4 large eggs
1.5 cups heavy cream
.5 buttermilk
2 tablespoons pure vanilla extract
1 teaspoon kosher salt
9x5 Loaf Pan
Let’s "bake"!
Preheat the oven to 375°F. Grease the loaf pan.
Spread the croissant strips evenly in the bottom of the dish. Top with the berries.
Top with another layer of croissant strips. Top with another layer of berries.
In a stand mixer fitted with the paddle attachment (or in a large bowl with a handheld electric mixer), beat the 12 tablespoons butter with the granulated sugar on medium speed until pale and creamy. Beat in the eggs, one at a time, beating well after each addition. Beat in the cream, buttermilk, vanilla, and salt (the mixture may appear curdled).
Pour over the croissants and berries in the baking dish.
Bake until a knife inserted near the center comes out clean, about 45 minutes. Serve warm.
Reheat the leftovers at 350F for 10 minutes or until warm.
