Delly's Warm Bowls: Elote Salad Dip

This installation of Delly’s warm bowls is here to help you jumpstart your spring. As i transition out of the warm dips of winter and football season, it is so nice to have a nice meal that is packed full of greens, protein, and nutrients without sacrificing flavor or the ability to enjoy it with a chip. The Greek yogurt, citrus, and herb dressing is both creamy and flavorful and plays into the other ingredients. This warm bowl is like elote dip in a salad, perfect as a whole meal, or a side dish or appetizer if you omit the chicken. You gotta try special warm bowl, you’ll be happy that you did.



This an absolutely delicious and healthy meal that is a staple in my house and life!

 

For the Creamy Cilantro and Jalapeno Dressing

  • ½ cup greek yogurt

  • 2 limes

  • ¼ cup cilantro,

  • 1 jalapeno, diced

  • 1 tsp garlic powder

  • 1 tsp chili powder

  • salt and pepper

For the Salad

  • 1 bag of kale finely chopped

  • 1 14.5 ounce can of corn

  • ½ cup cotija cheese, crumbled

  • 1/2 red onion, diced

  • 2 avocados, diced

  • 4 chicken thighs, cut into very small cubes

To prepare the dressing,

  1. Add Greek yogurt to a cereal bowl.

  2. Squeeze the two limes into the bowl. Mix the yogurt and lime juice together until smooth.

  3. Add diced cilantro, diced jalapeno, garlic powder, chili powder, salt and pepper to the bowl.

To prepare the salad

  1. Cook the chicken thighs and dice.

  2. Roast the corn on the stove top until kernels just start to brown.

  3. Finely chop the kale and add to a large bowl.

  4. Add diced red onion, roasted corn, chicken, cotija cheese, and diced avocado to the bowl.

  5. Drizzle the dressing over the ingredients and mix well.

  6. Enjoy however you wish.

 

This recipe can be changed to be vegetarian and more or less spicy. If you enjoy this recipe remember to leave a comment and share it with friends!
