Delly's Warm Bowls: Recipe Roundup

As winter comes to an end and spring begins, I am paying homage to the cornerstone of my winter, big, warm bowls of food. These are some of my healthiest, most delicious, leftover-friendly recipes to date, and I am confident that you can find a weeknight staple or two or three among this bunch.



You really can't go wrong with any of these recipes for a healthy weeknight dinner so just print out the mood board, throw a dart, see what you hit, and get started.




This was the first installment of Delly’s warm bowls. A healthy chicken, sweet potato, and chickpea bowl with a quinoa and Brussel sprout base. The lemony shallot- honey dressing makes this warm bowl beyond irresistible. You can substitute the chicken for any protein that you wish or omit it completely if you are a vegetarian. Enjoy!



This is the perfect recipe to request from your husband on a sick day. Each spoonful is soothing and packed with nutrients and flavor. It starts with a simple, easy to throw together ginger and turmeric curry paste, and is finished with veggies, chicken, coconut milk, and trader joe’s noodles.


This salad dip will help you jumpstart your spring. As i transition out of the warm dips of winter and football season, it is so nice to have a nice meal that is packed full of greens, protein, and nutrients without sacrificing flavor or the ability to enjoy it with a chip. The Greek yogurt, citrus, and herb dressing is both creamy and flavorful and plays into the other ingredients.


This concept was viral in 2020 for a reason. It is one of the most delicious, leftover friendly meals possible. My version adds a few elements namely these quick pickles, and a creamy marinade for the salmon.


This salad is so delicious, nutritious, and easy to make. It is inspired by the famous Baked by Melissa green goddess salad, but with pistachios instead of almonds and diced chicken for some extra protein. It can be enjoyed with a chip, as is suggested but you could also use this salad on a taco, in a wrap, or all alone with some extra chicken.


This is an upgraded, more flavorful, fresh, and meal prep friendly version of Chipotle, made with cilantro lime rice, the quickest and most flavorful beans that i have ever made, and a zesty, spicy corn salsa that you might finish with chips before it even makes it to the bowl. Simple, delicious, and the perfect companion for watching the Eras Tour on the couch.



I love a green sauce and this green chimichurri sauce is the ultimate green sauce. It is bright, punchy and versatile. You can pour it over a warm steak bowl to instantly elevate it to restaurant level perfection and then use the leftovers to drizzle over eggs, toss your veggies in it, as a chicken marinade, or mix with Greek yogurt for a healthy dip or spread for sandwiches.



This is my personal favorite of these recipes. It is sooo easy and so flavorful. It reheats so well, I throw it in with eggs, add it to wraps, and enjoy over rice. I have probably made it 5 times now and have yet to get sick of it.
