Grilled Peach and Tennessee Whiskey Cocktail

I made this delicious drilled peach and whiskey cocktail to celebrate 10 days until the release of the Tortured Poets Department but its appeal obviously goes beyond April 9th, 2024. This cocktail is sweet, smokey, and deep. You are gonna love it!
I was 11 when Debut came out in 2006 and the world started to fall in love with Taylor Swift. I remember sitting in 6th grade social studies, talking to my friends about her incredible hair, our favorites on the album and overhearing the boys talk about being in love with her and being jealous. When I listened to the album as an 11 year old I was floored that someone so cool had felt and been able to capture every feeling I had ever felt and put it into words and now that I’m 29 I am floored that she was such an incredible songwriter at such a young age and can’t help but get emotional about how painful it must have been to have those words sold to a rat by the man that saw her at Bluebird cafe when she was barely older than I was when the album came out. Needless to say, I love debut, its banger after banger and I can’t wait for TPD and I made this cocktail because the way your blue eyes shine put those Georgia stars to shame that night.

Ingredients:
1/2 of a peach, cut into slices
1 oz of maple syrup +2 tbsp for the grilled peaches
2 oz bourbon, I used Woodford Reserve
1 oz of lemon juice
3 springs of thyme
Top with ginger beer
Angostura bitters, 3 dashes
Let's Assemble!

Essential Equipment
My cocktail shaker is from Etsy, they are out of stock at the store that I linked but there are other cute ones available at other shops. I wanted a glass and gold one so that you can see the contents of the shaker in my video. Any basic set will suffice. I have seen them at thrift stores and they are always available at Target and other stores with a home goods section.
My jigger is from Williams Sonoma, it was expensive for a jigger but I love it! The are available for much cheaper in other places and you can also measure using a shot glass since this is such a simple ratio.
My grill pan is from Le Creuset by way of Williams Sonoma. It is so useful since I don't have a grill. Can be used for peaches or for chicken breasts!
For the cocktail:
Coat peach slices with maple syrup and transfer to the grill. Grill on each side for about 3 minutes, until there are grill marks.
Let cool completely.
Add 4 grilled peach slices, 2 springs of thyme, 3 dashes of angostura bitters, bourbon, lemon juice, and maple syrup to a cocktail shaker.
Add a few ice cubes and shake well, until peaches are at least partially broken down.
Strain into a cocktail glass. Add a few cubes of ice. Top with ginger beer and garnish with a grilled peach slice and a spring of thyme.
