Honey Limoncello

This at home limoncello is suspiciously easy to make. All you need is a bottle of vodka, a bag of lemons, honey, and patience to open up a whole new world of limoncello spritz's, a sip-able spirit, or my hard lemon-honey green tea cocktail.
You can decide if you want this lemony spirit to be sweet and mild enough to be enjoyed on its own, or lemony and bitter, just taste as you go when adding the honey syrup. This is such a fun and rewarding little recipe.

Ingredients:
Honey Syrup:
1 cup of honey
1 cup of hot water
Honey Limoncello:
Ten lemons, dried and washed
1 bottle of vodka, 750 mL
Honey syrup to taste

Essential Equipment
I use my Weck jars for everything, including veggies crisp, pickling, for my sourdough starter, and for keeping this honey limoncello.
You need a measuring cup, mine is the beyond measure 2-cup, from Great Jones.
A vegetable peeler to get the peels off of the lemons.
A strainer or cheesecloth to strain the limoncello.
Heat safe container for mixing the syrup, I use a coffee cup.
I got all of the ingredients for this recipe from my local Vons and my neighbor's lemon tree!
For the honey syrup:
Add the honey to a heat safe container, I often use a coffee cup.
Pour the boiling water over the honey and stir until the honey is dissolved.
For the honey limoncello
Start by peeling the lemons using a vegetable peeler. Try to only get the yellow part and none of the white pith.
Transfer the lemon peels to your jar of choice and cover with vodka. Seal the container and set aside for at least 5 days or up to 3 weeks. It will get more lemony the longer it sits.
Strain the vodka and lemon peel mixture into another container. This container should be larger, only about half full of the lemon vodka so that you have room for the honey syrup.
Add the honey syrup about a quarter cup at a time, tasting as you go until you reach your desired level of sweetness.
Store the limoncello in a airtight container and keep in the fridge!
